While browsing the internet, I came across this post on Andrea’s Wellness Notes. She has a giveaway going on for $100 American Express Gift Card. One of the entries was to post about it on your blog. So hurry over to her site and enter.
The entry rules did not state I had to share a recipe, but you know I love cooking and recipes so I’m posting a six ingredient recipe for you to try. I’ll have to make this next week and update this post with a photo as I don’t seem to have one right now. I could have sworn I took one last time I made this.
- 1 pound of ground meat
- 1 large jar of salsa or can of diced tomatoes, Mexican flavor
- 1 bag of frozen corn
- 1 large can of sliced olives
- 1 bag of Doritos
- shredded cheese
In a large pot, brown the ground meat (I usually use hamburger, but you can use whatever you prefer). Add jar of salsa or diced tomatoes, frozen corn and olives. Bring to boil. Add bag of Doritos. (Use some kind of cheese flavor. Back before they had so many choices, I just used the regular cheese kind. However, now they have so many varieties, I just choose a Mexican type. Whichever I’m in the mood for that day.) Stir well. Sprinkle cheese on top. Turn down to simmer and cover. Let rest for 20 minutes or until the Doritos are no longer crunchy. Serve and enjoy!
