Wow. I didn’t realize I haven’t posted at all in 2013. How did that happen? Let’s see if I can get back in the groove. :)
I created this menu plan Monday night, but my computer was having issues. So rather than fight with it, I went to bed and decided to post first thing the next morning. Technology is great until it’s not!
I’ve missed my menu planning. It really helps me not stray now that I’m trying to be faithful to the low-carb lifestyle. I keep instant rice and potatoes and a few other “carb” products that are easy to cook just a serving of on hand in case Andrew wants it, but lately it seems more often than not he is perfectly happy with the low-carb meal.
I’ve lost almost 30 pounds. I’m feeling better as well as looking better. In fact I willingly posted pictures of myself on Facebook the other night. Usually the only pictures of me on Facebook are either of me with somebody or one that my evil sister took and posted. ;)

Monday: Tyson Beef Pot Roast in gravy with oven roasted broccoli and french style green beans cooked with bacon
Tuesday: Taking Andrew out to eat for his birthday! He wants to go to El Toreo, a local Mexican restaurant, so that he can get a pie in the face. Yes, that is my child. LOL
Wednesday: Ham Steak with leftover french style green beans cooked with bacon
Thursday: Salmon Patties with leftover cream sauce for the Angel Chicken I made in the crockpot last week. Serve with broccoli
Friday: Buffalo Crack Slaw
Saturday: Cucumber Tuna Sandwiches
Sunday: TBD We’re doing a family birthday party for Andrew this day. Not sure if I’ll serve dinner or just cake. I’ll probably end up at least serving hot dogs and chips. Maybe with some chili.
